One downside of small town living is little convenience when a “snack attack” emerges and you have a sad and empty pantry due to a dire need of a grocery store trip forcing you to learn to improvise with what is on hand (which fortunately usually means I snack healthier than I would if able to run out to the store at any time of day!) This recipe was born out of one of these scenarios, it’s quick and delish!
Banana Muffins with Streusel Topping
1 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt (omit salt if the butter you are using has salt)
1 tsp cinnamon
3 bananas, mashed
3/4 cup white sugar
1 tsp vanilla
1/3 cup butter, melted
1/3 cup brown sugar
2 tbsp flour
1/4 tsp cinnamon
1 tbsp butter, softened
Preheat oven to 375 and grease muffin tins. *Quick tip* if you are using butter that comes wrapped in foil an easy way to grease pans/ect is to rip off a piece of foil and rub it on the pan – the butter residue on the foil is usually enough for greasing.
Mix together flour, baking soda, baking powder, cinnamon and salt in a large bowl. In a separate smaller bowl mix together bananas, sugar, egg, vanilla and melted butter and then combine with flour mixture. Mix together brown sugar, flour and cinnamon in a small bowl. Add butter and combine (should be a sandy texture) Spoon batter into muffin tins (filling each tin to the brim so when baking you get a large muffin top) and top with sugar mixture.
Bake 18 minutes, allow to cool and enjoy!
