Baked Tuna Cakes

The Dish of the Day is Fish, Tuna to be exact.
I would like to report than my attempt at making fish cakes (a first in this kitchen) was successful and surprisingly yummy! After a somewhat disappointing Google search for a recipe I decided to make my own adaptation. Unfortunately little A was in one of his moods last night and didn’t even TRY his dinner so I have no input from him but me and Hubs were happy as clams…or fish…although I suppose the fish weren’t too thrilled about being baked so perhaps that isn’t a good reference here.

Baked Tuna Cakes

2 cans tuna, flaked
2 eggs
1 large carrot, grated
1/4 cup green onion, chopped
1 tbsp butter
1 cup Ritz cracker crumbs (or other cracker/bread crumb that you have on hand)
1/2 lemon juice & zest
1/4 tsp paprika
1/4 tsp garlic powder
salt & pepper
Tzatziki sauce for dipping

Preheat the oven to 350 degrees.
In a small frying pan saute the green onions in the butter for a few minutes.
In a medium bowl add tuna, carrot, onion, cracker crumbs, lemon juice & zest, eggs and seasoning. Mix together.
Grease a baking sheet and form mixture into six patties (approximately 1 inch thick) and bake for 15 to 20 minutes, until the edges are golden brown.
Serve with greek tzatziki sauce or mayo for dipping.
