Confetti Crisps

Sometimes we all need something to satisfy our sweet tooth…and sometimes we don’t feel like waiting FOREVER to bake a cake and then let it cool and then make icing and then put the icing on… so in times of great need I turn to rice crispy squares. My latest (and new favourite) version made with confetti cake mix, this pan lasted a few hours tops they were THAT yummy!

Confetti Crisps
5 cups mini marshmallows
6 cups rice crisps cereal
1 cup boxed confetti cake mix
1/4 cup butter

Melt butter in large pot on low heat, add marshmallows and stir continously until melted. Add cake mix and constantly stirring add cereal. Pour mix into greased pan and press down, cover with plastic wrap and allow to harden for 30 minutes to an hour.
{Or if you are naughty like me you can eat them from the pan while they are still warm and gooey}

If you plan on keeping them for a few days cut the squares and transfer them to an air tight container to prevent them from hardening too much.
