Pampered Camper’s French Toast

To some dismay I am home from my week-long holiday spent camping in beautiful British Columbia. It was a week spent lazing around on the beach (pictured below), swimming in the lake, relaxing with friends and family and of course…food!

I wouldn’t describe our camping as “roughing it” although I’m sure many would disagree as we lived a whole week without power, flushing toilets, showers and had to make due cooking over two small propane stoves for 6 adults and 2 children. Call me crazy but it was a great week!
Despite the lack of amenities we still managed to sneak some great meals around the hot dog rotation like chicken caesar salad, spaghetti with meat sauce and the winner (in my opinion) French Toast with Caramelized Banana’s, YUM!
The good news is you don’t have to go camping to enjoy this meal {non-campers rejoice!}

French Toast With Caramelized Banana’s

6 slices of thick white bread
3 eggs, lightly beaten
1/2 cup milk
1 cup brown sugar
2 tsp vanilla extract
1 tsp cinnamon
2 banana’s, sliced
1/2 cup butter

Heat a large pan on medium-low. In a small bowl whisk together the eggs, milk, 1/4 cup of the brown sugar, cinnamon and 1 tsp of vanilla.
Dip two slices of bread in batter, drip off excess and place in pan. Cook until golden brown (2-3 minutes each side) and remove to dish, cover in foil to keep warm until all pieces are cooked.
Turn heat down to low and melt butter in pan, add vanilla and sugar stirring constantly until sauce thickens and turns a golden brown (be very watchful as sugar will burn quickly). Add banana’s and gently stir to evenly coat. Remove from heat.
Once toast is plated spoon banana sauce over top and enjoy!
